Smoked Garlic Sauce 250ml 
This delicious dark sauce is made in Marlborough using locally grown garlic and naturally brewed malt vinegar blended with other quality ingredients. Cabernet Sauvignon Vinegar 
Wine Vinegar's of Distinction - endorsed by Peta Mathias Made from Marlborough Cabernet Sauvignon grapes, this traditional 50-grain vinegar has spent over four years in oak barrels gently undergoing the transformation from wine to vinegar. Prenzel vinegar's are matured using a centuries-old technique developed by French masters in New Orleans. The Orleans method is time consuming but stunning in the deeply layered flavours that result. This vinegar is a rich garnet colour and has a wonderful caramel flavour with underlying notes of ripe berries. Vincon Red - Wine Stock Concentrate 
Prenzel Vincon began as a request from executive chefs to create a pre-reduced wine stock. The result is a concentrate that contains four times the flavour of table wine without the alcohol or need for time consuming reducing. Vincon can replace red wine in cooking by using a quarter of what the recipe calls for. Casseroles, sauces, vinaigrettes and marinades are easy to make and full of flavour. This product will keep for six months once opened 500ml bottle.

Prenzel Flambe' 
Originally designed for the Food service division, Prenzel are so pleased with the feedback from professionals that they have decided to share this exciting product with us all. Although the practice of lighting food for show goes back to the Moors in the 14th century, modern flambéing became popular only the late 19th century. According to popular belief, it was discovered again in Monte Carlo in 1895, when Henri Carpentier, a waiter, accidentally set fire to a pan of crepes he was preparing for the future King Edward V11 of England. He realised that burning the sauce affected its flavour in a way that he could not have anticipated. The Flambéing technique is often used tableside at restaurants for a dramatic display but now you can Flambé' for yourself at a far lesser cost. One of the most laborious tasks in restaurants and the catering trade is the reduction of wine, a process in which wine is boiled until most of the liquid and alcohol has evaporated, so that the essential flavour of the wine becomes as concentrated as possible.

When Prenzel Distilling Company was approached by a major NZ company to help them overcome this tedious process of 'reduction', we took on the project as a bit of challenge. Vincon was the result - a world first judging by its international acclaim.
What is Vincon?

Vincon is a concentrated red or white wine to be used in all cooking applications in which we would traditionally use wine.

The optimum way to use Vincon is by using it to flavour a dish - in much the same way as Soy Sauce or any similar condiment is used - by adding it according to taste when the cooking has finished.

If using a recipe which requires the use of wine, Vincon can be added at any time, by diluting it with 3 times it's amount of water or stock. This ensures that it will not be too concentrated.

If using for marinades, use ½ Vincon, ½ water, with a little garlic or chilli oil, a bay leaf, and an onion. You will find a radical and delicious transformation of even the dullest meat.

Another advantage of using Vincon rather than wine is that now you can use your wine for the purpose in which it was intended - drinking!
