Prenzel
Citrus Vinaigrette was born on a summers evening
in the midst of a salsa dance competition. It
sounds unlikely but it's true! Fresh moves were
transferred to a subtle blend of fresh and fruity
that adds flavour to any salad.
Capture the elements of summer with this rich
and smooth vinaigrette created with natural New
Zealand ingredients.
The Citrus Vinaigrette is made from our own Lemon
Rice Bran Oil with other citrus oils added,
Dijon mustard, Manuka honey and cider vinegar.
Lemon is the predominant citrus flavour and in
combination with the Manuka honey, produces a
wonderful savoury twist on a Kiwi favourite.
Concept
The lemon tree is one of the most popular and
common fruit trees found in New Zealand gardens.
Cultivated primarily for is culinary applications,
the lemon tree is also valued for its ornamental
and medicinal properties. Indigenous to India,
lemon trees thrive in the Mediterranean type climate
and quickly became an important part of Mediterranean
cuisine.
Used by sailors to combat scurvy on long sea
voyages, lemons and limes were adopted into the
European diet as well. In fact the term "limeys"
for people of British extraction came about because
of the limes consumed by British sailors. The
New Zealand climate is also perfect for citrus
fruit propagation and after their initial plantings
in the King Country in 1838, lemons and limes
(as well as other citrus fruit) were quickly adopted
as a Kiwi flavour favourite.
Health Properties
Lemon juice has a high concentration of citric
acid and also contains a small amount of fructose,
and is rich in Vitamins A, B and C.
Lemon has always been popular as a food flavouring.
The juice and skin enhance the flavours of other
foods and have the added benefit of aiding digestion
and providing vitamins.
Lemon is considered by herbalists as the most
valuable of all fruit for preserving health. Lemon
juice has been used as an astringent, particularly
for inflamed, irritated mucous membranes, eg.
sore throat, and also has antioxidant and antimicrobial
properties. It contains a number of active components
that contribute to its therapeutic action including
citric acid (6.7% to 8.6%), vitamin C, bioflavonoids,
pectins and potassium.
The white pith contains bioflavonoids which help
with the absorption of Vitamin C. Lemon also lowers
body temperature, relieves thirst, and improves
digestion. Lemon juice taken internally has an
alkalinising effect on the body. The whole fruit,
especially the pith, strengthens vein walls and
has been used in the treatment of arteriosclerosis,
weak capillaries, and varicose veins.
The Use of Preservatives
Prenzel prides itself on its natural products
that are free from additives. Unfortunately the
Citrus Vinaigrette does contain two natural preservatives.
Why? The combination of ingredients we used in
the vinaigrette created instability and meant
that oxidation took place over a short time span.
This effectively meant that nasty bugs were beginning
to grow in the vinaigrette and so we had to add
the preservatives to counter-act this and provide
longevity for the product.
Applications
Designed obviously with a salad in mind, the
citrus vinaigrette will also enhance a wide variety
of dishes. Here are some simple ideas:
- Prawn cocktails (instead of thousand island
dressing)
- Potato salad
- Kumara and orange salad
- With smoked salmon (serve salmon on top of
a potato fritter with rocket and drizzle citrus
vinaigrette over the top)
- Enhance any smoked chicken salad
- Spinach and mandarin salad
- Drizzle over bbq roasted peppers, aubergines
and courgettes
- Use as a baste for chicken or fish on the
bbq
- The perfect salad sandwich dressing
- Drizzled over roast baby beetroot
- Tuna salad
- Over fish cakes
- With potato, salmon and sundried tomatoes
