Carrot
Cake Muffins
If you like Carrot cake then you'll love these
individual cakes! Great for a tea party or for a
children's party. Makes 30 mini muffins.
INGREDIENTS
- 2 cups flour
- 1 tsp. baking powder
- 3/4 cup sugar
- 2 tsp ground cinnamon
- 1 cup grated carrot
- 1/2 cup sultanas
- 3 eggs, lightly beaten
- 3/4 cup Prenzel
Butter Sunflower Oil
METHOD
Preheat oven to 200°C.
Combine the flour, baking powder, sugar and cinnamon
in a bowl.
Stir in the grated carrot and sultanas. Make
a well in the centre of the dry ingredients and
pour in the combined eggs and oil.
Gently mix together. Spoon the mixture into 30
mini muffin cups.
Bake for 8-10 minutes, until springy on the surface.
Spread with cream cheese icing.
