Mulled
Wine Fruit Cake
INGREDIENTS
- 125g butter
- 1 cup sugar
- 625g mixed fruit
- 450g crushed sweetened pineapple
- 50ml Prenzel
Mulled Wine Mixer
- 1 tsp baking soda
- 2 beaten eggs
- 1 cup self raising flour
- 1 cup plain flour
- 1 tsp baking powder
METHOD
Preheat oven to 180°C and line cake pan.
Put butter, sugar, mixed fruit, pineapple, Mulled
Wine and baking soda in saucepan and bring to
the boil, then simmer for 5 minutes, stirring
regularly.
Cool, then add remaining ingredients and combine
well.
Cook for 2 hours - the first hour at 180°C,
then lower temp to 150°C for second hour.
If cake starts to brown, cover with tin foil.
Check regularly after first hour and remove when
an inserted skewer comes out clean. Cool cake
in tin.
