Frittata
INGREDIENTS
METHOD
Heat oil in heavy pan. Add kumara, onion, mushrooms
and bacon.
Cook over a medium heat 5-7 minutes until kumara
is tender.
Lightly beat eggs in a large bowl. Add salt and
pepper. Mix in the parsley and red pepper and
mix well to combine.
Pour mixture over the kumara and cook over a
low heat until nearly set.
Place under a pre-heated grill and cook the top
of the frittata until golden and set.
Serve with a green salad and Prenzel Premium
Avocado Vinaigrette.
