Gin
& Lime Mousse
A
wonderful light zesty summer dessert. Serves 6.
INGREDIENTS
Decoration
- 2 Tbsp sugar
- 1/2 cup water
- Shreds of lime zest
METHOD
Beat egg yolks, sugar and lime zest until thick
and lemon coloured.
Combine lime juice, Citron Vert and Gin in a
small stainless steel bowl and sprinkle gelatine
over. Stand this bowl over another bowl of hot
water to dissolve gelatine. Allow water to cool
to room temperature, then gently stir lime mix
into egg and sugar mixture.
Beat cream until soft peaks form. Fold this into
mousse mixture.
Beat egg whites until stiff peaks form, gradually
beating in second measure of sugar. Fold into
mixture in two batches. Pour into 6 glasses and
refrigerate for a few hours or overnight.
Decoration: Dissolve sugar in water then
bring to a simmer in a small saucepan. Add shreds
of lime zest and simmer for 5 minutes. Remove
zest and place a few shreds on top of each dessert.
Simply serve, or accompany with biscotti and a
Gin & Tonic with a dash of Citron Vert!
