A zesty summer salad, great for taking to a barbecue.

INGREDIENTS

  • 8 cups baby spinach
  • 1 Tbsp red onion, chopped
  • 310g mandarins (canned or fresh)
  • ½ cup walnuts, toasted
  • Prenzel Citrus Vinaigrette

METHOD

To assemble the salad, place fresh spinach leaves in a large bowl and add red onion, drained mandarins and toasted walnuts. Toss then drizzle through vinaigrette.
